Sweet Potato Pancakes

I am always having a hard time figuring out what to feed my toddler girls. They like something one day, and the next they won't even take a bite. They really don't like most vegetables plain, so it is nice to find recipes that include vegetables. I have a recipe for pumpkin pancakes that I feed them fairly often, so I was really wanting to try something new. I had a can of yams, so I thought I would look up a recipe for sweet potato pancakes. I found this recipe from Weelicious that is so yummy, I ate 3 of them myself. And Ivy and Clara really enjoyed them, too. Here is the recipe:

I think I will have to make it one night this week for dinner so Preston can enjoy these delicious pancakes with me!
